Chicken Mushroom Soup with Macaroni

Ingredients:
minced chicken meat

1 medium size onion chopped up
10 chopped up button mushrooms
25g of unsalted butter
1 wedge of lemon (get the juice from the wedge)
50g plain flour
1 tablespoon of nestle cream
a bit of salt
a bit of pepper
chopped up broccoli
half of carrot chopped up
600ml water
sprinkles of Italian herbs
boiled macaroni

Methods:
(1) Sauteed the onions and carrots with butter till fragrant and soft.
(2) Add chopped up mushrooms and stir well. Add the lemon juice and stir quickly.
(3) Add the plain flour and whisk well, then add the minced chicken and water. Let it boiled.

(4) Add the Italian herbs and simmer for 25 minutes.
(5) Add salt and pepper to taste.
(6) Remove from fire and then add the nestle cream and whisk well.
(7) Serve on its own or with boiled macaroni.

Fried Macaroni

Ingredients:
minced chicken meat

chopped up garlic and onions
chopped up button mushrooms
1 tablespoon of olive oil
a bit of soya sauce
a bit of pepper
chopped up broccoli
chopped up carrots
some vegetarian mushroom ikan bilis (optional)
boiled macaroni

Methods:
(1) Sauteed the onions and garlic till fragrant.
(2) Add minced chicken and stir till slightly cook.
(3) Add the button mushroom, carrots and broccoli. Fry a little while.

(4) Add the boiled macaroni. Mix well.
(5) Add a little bit of soy sauce, pepper and vegetarian mushroom ikan bilis.
(6) Stir well till all mix up. Ready to serve.

Grilled Chicken Sandwich

Ingredients:
1 slice of chicken fillet
1 garlic
1 stalk of rosemary
1 tablespoon of olive oil
a bit of salt
2 slices of bread
1 slice of cheddar cheese
some salad leaves
a little bit of butter
1 tablespoon of lemon juice

Methods:
(1) Use mortar and pestle to crush the garlic, rosemary leaves, salt and olive oil.
(2) Marinate the chicken fillet with the crushed ingredients for 30 minutes in the refrigerator.
(3) Prepare the bread by spreading butter on it and placing the salad leaves and then cheddar cheese on it. Set it aside.

(4) Place marinated chicken fillet into baking pan and bake for 25 minutes at 180 deg Celsius.

(5) Pour the lemon juice over the cooked chicken fillet.
(5) Slice the cooked chicken and place the sliced chicken into the bread and cover it with another slice of bread on top

Chocolate Wafer

Most children would love chocolates. My kids are crazy about them. Instead of giving those ready made in the supermarket, why not bake this wafer to satisfy their cravings. At least you know what is added in it and you can control the amount of sugar being added to it. It is crispy and it has wonderful chocolate taste. Here is the recipe:

Ingredients:
130 grams all purpose flour

50 grams unsweetened Dutch-processed cocoa powder

1/4 teaspoon baking soda

1/4 teaspoon salt

90 grams unsalted butterroom temperature

180 grams brown sugar
1 teaspoon pure vanilla extract

1 large egg

Methods:
(1) In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
(2) In the bowl of your electric mixer (or with a hand mixer), cream the butter until smooth. Add the sugar and vanilla extract and beat on high speed for about one minute. Scrape down the sides of the bowl. Beat in the egg white. Add the flour mixture and beat just until incorporated.
(3) Place the dough on your work surface and, using your hands, form the dough into a log shape that is about 9 inches (23 cm) long. Carefully wrap the dough in aluminum foil, parchment paper or wax paper and fold or twist the ends. Try not to flatten the log. Refrigerate for at least one hour or overnight.

(4) Preheat the oven to 350 degrees F (177 degrees C) and place the oven rack in the center of the oven. Line two baking sheets with parchment paper.

(5) Using a sharp knife, slice into 1/4 inch thick wafers. Place on the baking sheet spacing about 1 inch (2.5 cm) apart. Bake for approximately 10-12 minutes or until the the cookies puff and the tops of the cookies have crackles (ripples). Remove from oven and let cookies cool on baking sheet for about 5 minutes before removing to a wire rack to cool completely. Can be stored in an airtight container, at room temperature, for about 10 days.

Makes about 36 cookies.

Chicken Burger

Ingredients:
For Chicken Patty:
50 gram of minced chicken
1 teaspoon of chopped garlic
1 teaspoon of chopped onions
a dash of pepper and salt (optional)

Tomato sauce:
2 tablespoons of tomato paste
a dash of sugar (optional)
a dash of italian herbs
a dash of pepper

Other:
salad leaves chopped up
tomato chopped up
burger bread
fried egg (fry the egg before frying the burger patty)
olive oil
cheese slice

Methods:
Chicken Patty
(1) Mix the minced chicken with garlic, onions, pepper and salt well. Set aside.
(2) Make the minced chicken into burger patty.
(3) Heat up some of the olive oil in the pan and place the patty.
(4) Place the burger patty in the pan and cooked the chicken till cooked and set aside.

Tomato sauce:
(1) Once the patty is done, removed and set aside, on the same pan add the tomato paste and a little bit of water.
(2) Stir for a while and then add a dash of sugar and pepper. Mix well and set a side.

Assembling the burger:
(1) Cut the burger bread into two.
(2) Place the bottom part on the plate.
(3) Add the chopped up salad leaves.
(4) Then place the cheese on the leaves.
(5) Place the fried egg.
(6) Then place the chicken patty.
(7) Add the cooked tomato sauce on the chicken patty and diced tomotoes at the top.
(8) Finally placed the top part of the burger bread.

Chicken Pasta

Ingredients:
1 tablespoon of minced chicken
1 tablespoon of chopped garlic
1/2 tablespoon of chopped onions
1-2 tablespoon of tomato paste
1 button mushroom, chopped
2 tablespoon of broccoli, chopped
1 tablespoon of carrots, chopped
some water
sugar/salt/pepper to taste (optional)
a dash of italian herbs
3-4 tablespoons of boiled alphabet pasta set aside
1 tablespoon of olive oil
some grated cheese (optional)

Methods:
(1) Heat up oil and sauteed the garlic and onions till fragrant.
(2) Add the minced chicken and stir till cooked.
(3) Add the mushroom, carrots and broccoli and stir well.
(4) Add the tomato paste, mix well and add water.
(5) Let it boiled and then add salt/sugar/pepper to taste (optional).
(6) Add the cooked pasta and mix with the sauce well with pasta.
(7) Garnish with cheese with desired.
